Grilled Cuban-Style Pork Chops
6 pork chops, about 1 inch thick
1/4 cup orange juice
4 cloves garlic, minced
2 tbsp lime juice
2 tbsp olive oil
2 tbsp fresh cilantro, chopped
1/4 tsp salt
1/4 tsp red pepper flakes
Combine all the ingredients minus the pork chops in a small mixing bowl and mix well.
Place the pork chops in a large resealable storage bag. Pour the marinade over the pork chops. Seal the bag and turn over several times to coat the pork chops.
Place in the refrigerator and allow to marinate for at least 4 hours, but preferably overnight.
Set up your gas or charcoal grill for medium heat.
Place the pork chops on the grill and discard the remaining marinade. Grill for approximately 10 – 12 minutes per side. The internal temperature should be 145F when taken with an instant read thermometer like this one. Remove from the grill and serve.
