Today we are going to show you how to make Grilled Chicken Santa Fe.
This is a great Southwest style grilled chicken recipe. It uses a simple marinade to add a lot of flavor to the chicken. We slice up the chicken and put them on tortillas and top with a warm salsa. It is really good.
Enjoy!
Grilled Chicken Santa Fe
4 chicken breasts, boneless, skinless
3 tbsp lime juice
1/4 tsp chili powder
1 clove garlic, minced
1/2 tsp cumin
1 (15-ounce) jar salsa
1 (8-ounce) can whole kernel corn, drained
6 (12-inch) flour tortillas
In a small mixing bowl combine the lime juice, chili powder, garlic, and cumin. Place the chicken breasts into a resealable storage bag and pour the mixture over them.
Seal the bag and turn several times to ensure that the chicken is well coated. Let marinate in the refrigerator for a couple of hours.
Set up your gas or charcoal grill for medium-high heat.
Place the chicken breasts on the grill. Cook for approximately 6 to 7 minutes per side, flipping only once. The internal temperature of the chicken breast should be 165F when taken with an instant read thermometer like this.
While the chicken is grilling, combine the salsa and corn in a saucepan and simmer over medium heat.
Once the chicken is done remove from the grill and slice. Warm the tortillas on the grill. Place the chicken strips on the tortillas and spoon some of the warm salsa mixture over the top.
Serve immediately.
