Today we are going to show you how to make Grilled Caribbean Chicken Breasts.
This is a really good marinade for chicken especially if you like a little hint of the Islands. It is really easy to make too, and it’s a nice change from just plain grilled chicken.
The recipe uses chicken breasts, but feel free to you legs, wings, or thighs too.

Grilled Caribbean Chicken Breasts
1 1/2 lbs boneless, skinless chicken breasts
1/4 cup fresh squeezed orange juice
1 tsp orange peel
1 tbsp olive oil
1 tbsp lime juice
1 tsp ginger, minced
2 garlic clove, minced
1/4 tsp hot pepper sauce
1/2 tsp minced fresh oregano
Using a food processor or a blender combine all the ingredients minus the chicken breasts. Process until mixed well. Here is the food processor that I use.
Place the chicken breasts into a shallow pan or a large resealable storage bag. Pour the marinade over the chicken breasts and place in the refrigerator for at least 2 hours, but preferably over night.
Set up your gas or charcoal for medium-high heat.
Place the chicken breasts on the grill, and cook for approximately 12 minutes turning once half way through grilling. Grilling time may vary depending upon the thickness of the chicken breasts.
