Today we are going to show you how to make Grilled Butter Rum Pineapple.
You are going to love this one. We make a butter rum sauce that we pour over the pineapple then grill. It is an awesome grilled dessert that tastes great with vanilla ice cream.

Grilled Butter Rum Pineapple
2 ripe pineapples
1/4 cup butter
1 tbsp fresh ginger, minced
1/2 tsp nutmeg
1/4 cup brown sugar
Zest of 1 lime
1/4 cup lime juice
1 cup dark rum
Using a medium saucepan melt the butter. Add in the ginger, nutmeg, brown sugar, lime zest and juice. Cook over medium heat for approximately 3 to 4 minutes.
Stir in the dark rum and bring to a low boil. Continue to cooking for a few more minutes, then remove from the heat and strain out the ginger. Set aside.
Cut the pineapples in half lengthwise including the leaves. Remove the cores. Using a long knife cut the fruit away from the outside skin making sure not to cut through the skin.
Slice the pineapple into 1/2 inch slices, taking care not to cut through the skin. When all the fruit is sliced away from the outer skin what you will basically have left is a pineapple boat.
Set up your gas or charcoal grill for medium-high heat.
Pour some of the warm rum sauce over the fruit and place on the grill. Cook for around 30 minutes while continually basting with the rum mixture. I use this basting set, it comes in really handy.
Remove from the grill and serve. The pineapple goes great with vanilla ice cream.
