Today we are going to show you how to make Grilled Bacon Wrapped Stuffed Shrimp.
I love shrimp on the grill because it is so quick and easy to make. What is really great about this recipe is that the shrimp is wrapped in bacon. Everything is better with bacon.
Enjoy!
Grilled Bacon Wrapped Stuffed Shrimp
20 large shrimp
20 strips lean bacon
12 ounces Asadero cheese
1 bunch fresh basil leaves
Clean the shrimp, peeling and deveining them. Cut the shrimp along the backside so you can lay them flat without slicing all the way through.
Cut the Asadero cheese int 1/4 rectangles. Place the cheese and a basil leaf in the middle of the shrimp. Close the shrimp. Wrap the shrimp with a strip of bacon and secure it with a toothpick. If you can’t find Asadero cheese use something like Mozzarella or Monterey Jack.
Set up your gas or charcoal grill for medium-high heat.
Place the shrimp on the grill. It might be helpful to use a grill basket so the shrimp do not fall through the grate. Here is the one I use. It can be used for vegetable as well, so it is very useful to have.
Grill for about 2 to 3 minutes per side until the bacon is cooked.
Remove from the grill and serve immediately.
