Today we are going to show you how to make a Grilled Bacon Wrapped Scallops.
Scallops are one of my favorite things to do on the grill, as they turn out so good. These in particular are wrapped with bacon, so what could be better than that.

Grilled Bacon Wrapped Scallops
24 large sea scallops
12 slices bacon
3 tbsp unsalted butter, melted
1/2 tsp salt
1/8 tsp pepper
2 lemons, halved
1/4 cup fresh chives, chopped
4 Skewers
On a large plate layer several paper towels. Place 6 slice of bacon in a row on the paper towels. Top the bacon with a few more layers of paper towels, and again lay down another 6 pieces of bacon in a row. Top with two more paper towels.
Place another plate on top of all this to flatten down the bacon. Place in the microwave for approximately 4 minutes.
In a large bowl, toss together the scallops butter, salt, and pepper until well coated.
Take two of the scallops and press them together. Wrapped one slice of bacon around the scallops. Push a skewer through the scallop and bacon. Here are the skewers that I use.
Continue this process with the rest of the bacon and scallops. You should put three groups on each skewer.
Set up your gas or charcoal grill for medium-high heat.
Place the skewers on the grill. Grill for approximately 8 – 10 minutes, flipping once half way through. The bacon should be crisp at this time and the scallops should be firm and opaque. Grill longer if needed.
Once done transfer the scallops to a platter and squeeze lemon over them and top with chives.
