Today we are going to show you how to make Grilled Artichokes with Garlic Mayonnaise.
Artichokes are probably not the most common grilled vegetable, but they are really good on the grill.
With this recipe we use a simple marinade and also a garlic mayonnaise to drizzle over the artichokes which gives them a ton of flavor.

Grilled Artichokes with Garlic Mayonnaise
5 medium artichokes
1/2 cup mayonnaise
1 clove garlic, minced
3 tbsp orange juice
1 pinch salt
1/4 cup extra virgin olive oil
2 tbsp chopped fresh tarragon
Juice of 2 lemons
1/4 tsp salt
For the garlic mayonnaise combine in a small bowl the mayonnaise, garlic, orange juice, and salt. Mix well, the place in the refrigerator.
In a large mixing bowl combine the olive oil, tarragon, lemon juice, and salt. Mix well, then set aside.
Clean the artichokes removing the bottom outer leaves, and any spiny leaf tips. Cut the artichokes in half and scoop out and discard the hairy chokes. Place the artichoke halves into the large bowl with olive oil mixture. Toss together well. Allow the artichokes to marinate in this mixture at room temperature for 1 hour.
Set up your gas or charcoal grill for medium-high heat.
Remove the artichokes from the marinade and place on the grill. Cook for approximately 20 to 25 minutes basting frequently with the marinade.
Once done serve with the garlic mayonnaise.
