Fruity Grilled Pork Tenderloin
2 1lb pork tenderloin
8 oz black cherry soda
1/3 cup brown sugar
1/4 cup soy sauce
1/3 cup plum jam
Mix together the soy sauce, brown sugar, and plum jam in a saucepan over low heat. Heat until it is well mixed. Take 1/4 cup of this mixture and set aside for basting sauce.
Put the rest of the sauce in a resealable storage bad along with the black cherry soda and pork tenderloin. Put it in the refrigerator and let marinate overnight.
Set up your gas or charcoal grill for medium-high heat.
Place the pork tenderloin on the grill. Cook for approximately 20 minutes, all the while basting with the reserved marinade. I like to use my cast iron basting set, which comes in really handy.
Once done remove from the grill and let it rest for about 5 minutes. Slice into 1/4 inch pieces and serve.
