Collard greens with smoked turkey necks is really good southern comfort food. If you’ve never had collard greens or turkey necks for that matter, you are going to love this recipe.
Most people don’t even think of using turkey necks for a meal, but there is so much good meat on them, and when they are smoked they are even better. You can buy your turkey necks already smoked for your local supermarket or butcher, or you can do it yourself.
If you want to try smoking them, check out my post on How to Smoke a Turkey.
Collard greens with Smoked Turkey Necks Recipe
6 Smoked Turkey Necks
2 Bunches Collard Greens
1 Small Red Onion, Diced
2 Garlic Cloves, Diced
2 tsp Olive Oil
Salt and Pepper
Rinse the collard greens and remove them from the stems. Roll up the leaves and slice into 1 inch thick strips.
In a pot simmer the smoked turkey necks over medium heat until they are tender. Add in the collard greens onion, garlic, and olive oil. I like to use a stock pot for this, here is one like I use.
Simmer for around 1 ½ hours until the greens are tender. Remove the collard greens and smoked turkey necks. The meat on the turkey necks should easily come off the bone.
On a plate add the collard greens and top with the smoked turkey necks. Add salt and pepper to taste.
Serves: 4
