Today we are going to show you how to make Grilled Corn and Red Pepper Salad.
This salad is the perfect dish to go along with any grilled meal. The grilled corn and peppers add a sweet and smoky flavor to the salad.
You are going to find yourself making this salad again and again.

Grilled Corn and Red Pepper Salad
4 husked corn cobs, cooked
1/2 red or orange pepper, cut into two pieces
2 green onions, finely chopped
1/4 cup red onion, finely chopped
6 tbsp olive oil
3-4 tbsp Lemon Juice or Lime Juice
2-3 tbsp parsley, finely chopped
1/4 tsp ground cumin
Salt and freshly ground pepper, to taste
Set up your gas or charcoal grill for medium-high heat.
Brush the corn and peppers with a bit of vegetable oil. Place the corn and pepper on the grill over the heat source. Grill for approximately 15 minutes turning occasionally.
Continue to grill the corn and peppers until they are cooked through and they are lightly charred. Set aside to cool.
Cut the kernels off of the corn and also dice up the peppers. Get yourself a nice slicing knife like this one. Place them into a large bowl and combine with the green onions, red onions, parsley olive oil, lemon juice, cumin, salt and pepper. Mix together well.
