Today we are going to show you how to make grilled chicken flatbread pizza.
I’m a huge pizza fan and if you are too you will really love this recipe.
Pizza is great, and it is even better on the grill. It grills up quick and delicious. Fresh mozzarella, basil, and sun dried tomatoes make this one so good.
Enjoy!
Grilled Chicken Flatbread Pizza
4 flat bread or thin pita bread
1 1/2 cups grilled chicken, sliced
1/2 cup sun dried tomato, coarsely chopped
6 leaves fresh basil, coarsely chopped
3 cups mozzarella cheese, grated
1 tsp salt
1 tsp ground black pepper
1 tsp red pepper flakes
Set up your gas or charcoal grill for medium-high heat with direct cooking.
In a mixing bowl combine the grilled chicken, sun dried tomato, basil, mozzarella cheese, salt, pepper, and red pepper flakes.
Place the flat bread or pita on the grill directly over the heat source. Spread the chicken mixture on the flat bread, spreading it to the edges.
Cover the grill. Grill for approximately 2 – 3 minutes until the cheese has melted. At that point it should be done. If you leave it on the grill too long the bread will start to burn. A little char to the bread is fine.
If you like making homemade pizza whether on the grill or in the oven, you are going to want a pizza peel. It makes putting the pizza on the grill and taking it off a heck of a lot easier. Here is the pizza peel that I use.
