Asian Grilled Shrimp
2 lb. jumbo shrimp, deveined and butterflied
1/2 cup extra virgin olive oil
1/2 cup fresh basil, finely chopped
4 large cloves of garlic put through a garlic press
2 tbsp white wine vinegar
1 tbsp Worcestershire sauce
1/2 tsp salt
1/2 tsp ground black pepper
Sambol Olek to taste (found in Asian grocery stores)
Skewers
In a mixing bowl combine the olive oil, basil, garlic, white wine vinegar, Worcestershire sauce, Sambol Olek, salt and pepper.
Place a 1/4 cup of this mixture into a large zip-lock bag and add the shrimp. Make sure all the shrimp gets coated in the marinade. Chill for around 2 hours.
Refrigerate the remaining marinade.
While the shimp is marinating if you are using wooden skewers make sure to soak them in water for around 30 minutes. This will keep them from burning.
Set up your gas or charcoal grill for medium heat.
Take out the extra marinade you set aside and heat in a small sauce pan over medium heat.
Thread the shrimp onto the skewers and grill for around 4 – 6 minutes, turning once half way through. The shrimp should be opaque once it is done.
Once finished, place the skewers on a platter and top with the heated marinade. Serve immediately
