Be sure to check out the video below to get all the finer points of cooking this one.
Here is what you will need:
1 Whole Pork Tenderloin
1/2 Cup Freshly Squeezed Lime Juice – approx 4 limes
Grated Zest from 1 Lime
1/4 Cup Honey
1 1/2 tsp Kosher Salt
1/2 tsp Garlic Powder
1 Chipotle Chili Pepper in Adobo Sauce – finely chopped
1 8oz Jar – for mixing the marinade
1 Gallon Storage Bag for marinating the pork
So, first it is time to mix up the marinade. Grab you 8oz jar and pour in the lime juice, and add the lime zest, honey, Kosher salt, and garlic powder. Put the lid on the jar and shake it to mix up the marinade.
Put the pork tenderloin into the gallon storage bag and pour half of the marinade mixture over it. Save the rest of the marinade mixture, as we will be using it later. Now to the storage bag add the finely chopped chipotle pepper. Mix the marinade all over the meat and seal the bag. Let it marinade in the refrigerator for at least 6 hours, but it will be so much better if you let it go for 24 hours.
Once the pork tenderloin is done marinating, set up your gas or charcoal grill for direct cooking over medium-high heat. Once it is heated up, oil the grates a bit and place the pork tenderloin right over the heat source, cover and grill for 1 1/2 minutes. Then using a pair of long tongs, turn the tenderloin a quarter turn and grill for another 1 1/2 minutes with the cover on.
You are going to keep turning it a quarter turn and grilling for 1 1/2 minutes until you’ve been grilling it for 12 minutes. When it is done the internal temperature should be 140F when taken with an instant read thermometer like this.
When it is done grilling, create an aluminum foil pouch and place the pork tenderloin in it. Pour over the other half of the marinade mixture you put aside. Seal up the aluminum foil pouch and let it sit for about 10 minutes before slicing into it. It is really a simple recipe for some great grilled pork tenderloin.
